2 Zucchinis, peeled and chopped into small cubes
1 medium onion, chopped and diced
1/2 cup Parmesan cheese
1 Cup Busquick
4 eggs
1/2 cup olive oil
1 Teaspoon Parsley (Optional)
1/2 cup block mozzarella, cubed (Optional)
350 Degrees for 45 minutes
